Masala papri


Yesterday My mother was making dahi baray and I wanted papri with it, searched in the kitchen.. no papri.. =(
My brother was asleep so I had to run my mind and wanted to make a crispy papri.. I used to make aalo k samosay and make its roti on my own.. so from that it clicked my mind and I started working on it and ALHAMDULILAH it turned out great!!
Here comes the recipe it can be used as a snack with ketchup or yoghurt dip too!!


Ingrediants:

All purpose flour   1 cup
Salt                        1/2 tsp
Red chilli flakes    1/2 tsp
Zeera                     1/2 tsp
Oil                         for frying

Method:

Knead flour with all spices and rest for 20 mins. Heat oil in a vok meanwhile make small balls and roll it as thin as possible. When the oil is hot *not smoking* put in the roti and let it cook on one side carefully turn it because this is the point where it can break. Light brown on both sides, drain the oil out of it. Enjoy with chanay ki chat or any dip as a snack!! =D

Chicken Potato Cutlets.


Ingrediants:


Potatoes                                          1kg
Chicken                                           250 gms
Salt                                                  To taste
Black pepper                                   1 tsp
White pepper                                   1tsp
Chinese salt                                     1/2 tsp
Capsicum (chopped and sauted)     2 medium
Egg                                                  1
Bread crumbs                                  to coat


Method:


Boil potatoes with a tsp of salt and mash. Boil chicken with 1 heaped tbsp of garlic paste and shred (I used an electric chopper to shred, so that the chicken combines evenly with the potatoes). Add chicken, black pepper, white pepper, salt, capsicum, Chinese salt in mashed potatoes and keep aside. Beat egg with 3 tbsp of milk, a pinch of salt and pepper. Shape the potato mix the way you like.. kebab form, ball or cylinder.. Dip in egg, Coat in crumbs.. and fry!


Serve with chilli garlic sauce *tastes awesome*

Chicken Tikka..


Ingrediants:

Chicken                                     1
Yoghurt                                     1 cup
Red chilli powder                      1 tbsp 
Cumin (roasted and Crushed)   1 tsp
Red chilli flakes                        1 tsp
Orange food colour                   a pinch
Salt                                            to taste
Lemon juice                              3-4 tbsp
Garlic paste                               1 1/2 tbsp
Oil                                             4 tbsp
Shan tikka masala                     2 tbsp


METHOD:


Add garlic paste, yoghurt, lemon juice and all the masalas in chicken, marinate and leave for 5 to 6 hours..
Put the marinated chicken on medium heat and cover. let the water dries up and chicken gets tender. When all the water is dried up add oil and bhonofy it. Heat coal on stove, when it gets red hot put it over a left over roti's piece and place it over the chicken, drop 2 to 3 drops of oil on it and as it starts fuming cover the pot with the lid. Let it rest for 10 mins.. uncover the pot and serve...

Cold Pasta Salad..



As my brother came home after a whole week, and for the very first time i missed him like anything *we fight alot* so I wanted to make something good for dinner, something thats his fav.. so my mother marinated the chicken and asked me to make chicken tikkas as she was invited somewhere for dinner.. I had in mind to make something else as well so i came up with our fav cold salad recipe and started off with it.. here comes the recipe.....


Ingrediants:


Pasta (boiled)                        1 packet
Potatoes (diced and boiled)   2
Cucumber (diced)                  3
Apple (diced)                         2 large
Mayonnaise                           4 tbsp heaped
Yoghurt                                 1 cup
Milk                                       3 tbsp
Sugar                                      1 tsp
Black pepper                          1/2 tsp
Salt                                          a pinch
Lemon juice                            1tsp


Method:


Mix togather mayo, yoghurt, milk and seasoning and whisk till combine. Add in lemon juice pasta, potatoes, cucumber, apples and mix well. Serve cold. Enjoy =D

Chicken Qorma...



Ingrediants:
  • Chicken                       6 pieces
  • Onions                         2 large (fried and finely crushed)
  • Garlic paste                 1 tbsp
  • Black pepper seeds      6-7
  • Cloves                          4-5
  • Black Cardamom         1
  • Green Cardamom         3
  • Dhaniya powder           1 1/2 tbsp
  • Red chilli powder         1 tbsp
  • Salt                               1tbsp
  • Haldi                             ½ tsp
  • Yoghurt                        2 cups
  • Oil                                1 cup
  • Rooh kewra                 2 tsp
  • Ginger thinly sliced     for garnishing


Method:

Heat oil. Add cloves, cardamom, pepper corns and fry. Add garlic paste and chicken. Fry till chicken turns white. Add all the spices above and 2 tbsps water. Stir till fragrant. Add yoghurt and cook on high flame till all water evaporates. Bhonofy the chicken well.  Add fried onions and stir well, in the end mix rooh kewra in 1and a 1/2 cups of water and pour in. let it cook on slow flames till the chicken is complelety cooked. Garnish with ginger. Enjoy.. =D

Peanut Butter Cookies..






   INGREDIANTS:

  • maida 16tbsp
  • unsalted butter 8 tbsp
  • powdered sugar 9 tbsp
  • baking powder 2 tsp
  • vanilla essence a drop
  • egg 1 medium
  • peanuts 1/2 cup chopped

METHOD:

Beat butter, sugar and essence till creamy. Add egg and beat. seive flour and baking powder and fold in. fold in peanuts too. Forming a soft dough, wrap in cling and refrigerate for 15 to 20 mins.. shape and bake on 180c in a preheated oven for 20 mins.. cool on a cooling rack. Enjoy! =D

Chicken cake





 INGREDIANTS:


  • maida                                              1 cup 
  • eggs                                                 2
  •  oil                                                   ½ cup
  • baking powder                                ½ tsp 
  • salt                                                  1 tsp 
  • red chilly flakes                               ½ tsp  
  • milk (to make it a bit runny)            2 tbsp 
  • chicken (in chicken tikka flavour cooked and shredded)  1 cup
  • ketchup                                          4 Tbsp
  • pizza sauce                                    3 tbsp  
  • Mozzarella or cheddar cheese       as much as you like


METHOD: 



Beat eggs and oil together fold in seived maida, baking powder and salt and red chilly flakes. Pour the batter in a cake tray and bake for around 20 mins in a pre heated oven at 180C Or when the toothpick comes out clean. Let it settle down a bit then spread ketchup and pizza sauce and place chicken and cheese on top (you can use capsicum and onion as well). And put it in the microwave or grill oven for about 5 mins just to melt the cheese.

Chocolate cake




Ingrediants:




  • Flour                      1 cup
  • Baking powder       1 tsp
  • Cocoa powder       1/3 cup
  • Unsalted Butter       1/2 cup
  • Sugar                      3/4 cup
  • Eggs                        2 large
  • Salt                          a pinch
  • Milk                        5-6 tbsp




Method:


Beat butter and sugar till creamy. Add eggs and milk and beat. Sift flour,salt, baking powder and cocoa powder and add in the beated mixture and fold. pour in a lightyly greased pan and bake in a pre-heated oven for around 25 minhs or when the toothpick inserted comes out clean. Take out the sponge and cool.


For fudge:


  • Thick Cream        1 packet
  • Chocolate             200gms
  • Cocoa powder     1tbsp heaped




Heat cream on a double boiler,add cocoa powder and stir well. Add coarsely chopped chocolate and take off the heat. Refrigerate for 20 to 25 mins and whip till spreadable.
